Kingston Banana Nut Cake Recipe

KINGSTON BANANA NUT CAKE
Sweet tasting Jamaican banana and peanut cake recipe 
from a top chef in Kingston.
INGREDIENTS
8 ripe bananas
2 cups brown sugar
6 cups flour
1¼ cup butter
13 eggs
½ cup sour cream
grated orange rind
1 tsp vanilla flavoring
½ tbsp cinnamon powder
½ tbsp ginger powder
½ tbsp baking powder
½ tbsp baking soda
¼ cup crushed nuts
¾ cup milk
PREPARATION
Mix banana and sugar with paddle in mixer until banana turns puree.
Add eggs, sour cream, butter, vanilla and rind mix thoroughly.
Sift flour and mix with spices, raising agents and nuts.
Add to mixture and mix for 5 minutes.
Pour mixture into lined sheet pans and bake.
