Bay Brownies Recipe

MONTEGO BAY BROWNIES |
|
A favorite for children from the resort town. |
|
We got this recipe from a grandmother in Montego Bay. |
|
INGREDIENTS |
|
3 squares unsweetened Jamaican chocolate |
|
½ cup butter |
|
1 tsp dried coffee |
|
¼ cup flour |
|
½ tsp baking powder |
|
¼ tsp salt |
|
2 eggs beaten |
|
½ cup granulated sugar |
|
½ cup brown sugar |
|
1 tsp vanilla extract |
|
1 cup chopped peanuts |
|

PREPARATION |
|
Preheat oven to 350ºF. |
|
Combine chocolate and butter in a small, heavy saucepan over very low
heat. |
|
Sprinkle coffee over chocolate mixture and allow to stand until melted. |
|
Stir well to and let cool, then grease an 8-inch-square pan; dust with
flour. |
|
In small bowl, stir together flour, baking powder and salt to combine
thoroughly |
|
In mixer bowl, combine eggs and sugars and beat at high speed until
thick. |
|
Blend in vanilla, chocolate mixture and gradually add flour mixture,
beating |
|
until well combined. |
|
Stir in peanuts and spread batter in prepared pan. |
|
Bake until edges pull away from sides of pan and centre. Do not
over-bake. |
|
Let cool in pan on a wire rack for about 10 minutes, then cut into 16
bars. |
|
Remove from pan when cool and serve. |
