½ cup granulated sugar |

½ tsp Jamaican cinnamon |

cup Olive oil |

1 cup Red wine |
|
4 large Ripe Jamaican Plantains |

Preparation |

Heat the oven to 350 degrees. Then remove the skin from the Jamaican
plantains and

slice them lengthwise in halves. In a large sauce pan, heat oil and add
Jamaican
|
|
plantains. Cook the plantains until browned on each side. Remove them to a
baking
|
|
dish and sprinkle sugar over all. Add Jamaican cinnamon and cover with red
wine.

|
Bake for 30 minutes until the plantains
become a red hue. |
