Jamaica Pepper Paste |

Ingredients |
|
½ cup Jamaican olive oil |
|
½ tsp Jamaica paprika or Jamaican pimento |
|
¼ tsp crushed cloves |
|
¼ tsp salt |
|
¼ tsp black pepper |
|
¼ tsp lime juice |
|
1 packet of mixed seasonings |
|
3 escallion stalks minced or diced |
|
|

Preparation |
|
Place oil, lime juice, all the Jamaican pimento and garlic in a blender or
food processor, |
|
and blend until fairly smooth. |
|
Transfer to a mixing bowl and add escallions. |
|
Stir mixture with remaining seasonings to make a paste, then refrigerate. |
